Dessert (serves 4)

 

Strawberry Pannacotta

 

You will need

  • 400ml can coconut cream
  • ½ cup caster sugar
  • 1 punnet of strawberries
  • 1 level tablespoon gelatine
  • ½ cup warm water
  • Four round moulds
  • Mint leaves
  1. Puree 1 punnet of garden fresh strawberries in food processor
  2. Place coconut cream and sugar in a saucepan and heat to dissolve sugar, cool
  3. Stir in strawberry puree
  4. Dissolve gelatine in warm water and stir through strawberry mixture
  5. Lightly oil moulds and pour in mixture
  6. Place in fridge overnight or until set
  7. Dip moulds briefly into a bowl of hot water and turn out on serving plates
  8. Decorate with remaining strawberries and mint leaves
